We've been enjoying winemaking since 1994 and creating incredible wine.

The Pinot Noir Winery has been a family-owned winery since its founding in the late 1990s. The family of winemakers have passed down their winemaking knowledge and techniques from generation to generation, creating a winemaking tradition that continues to this day. The Pinot Noir Winery was founded by John Smith and his wife, Mary Smith. 
John was a farmer and a winemaker, and Mary was a cook and baker. Together they recognized the potential of winemaking in the area and set out to create a winery that would produce high-quality wines.

The Smiths built the winery on a piece of land that John had purchased in the late 1990s. He cleared the land, planted the vines, and built the winery from the ground up. He also developed a unique method of winemaking that would become the hallmark of the Pinot Noir Winery. Now it is recognized by all wineries around the world.
Our winemaking method is based on European methods. We use natural fermentation methods and barrels to age the wine and indigenous grape varieties to make the wines, which gave them a unique flavor profile.

Conversion of the open land to vineyards.

1996

Pinot Noir foundation by a group of 6 friends.

1997

Vineyards conversion to organic farming.

2005

The first release of 500 award-winning wines.

2011

Opening of wine tastings in our cellars to the public.

  • Step 1. Harvesting

    Determining when to harvest requires the outdated tasting as well as simple scientific approach. The grapes sweetness and acidity must be completely balanced, but harvesting also depends heavily on the weather conditions.

    Hand-picked grapes must be sorted by quality, removing under-ripe or rotten grapes along with leaves and petioles.

  • Step 2. Crushing and Pressing

    Grape crushing and pressing is a process used to extract juice from grapes in order to make wine. The process involves separating the skins, seeds, and stems from the juice. 
    This can be done with a variety of methods, including mechanical crushers, manual presses, or even a combination of the two. The juice is then collected and stored for fermentation.

  • Step 3. Fermentation

    The fermentation process begins with the crushing of the grapes. This releases the juice, which is then combined with yeast and other microorganisms. The yeast consumes the sugar and produces alcohol and carbon dioxide. 
    The fermentation process can take from several weeks to several months, depending on the type of grapes and the desired result.

  • Step 4. Clarification

    Wine clarification is the process of removing unwanted particles and substances from the wine. This process can be done using a variety of means, including filtration, centrifugation, and addition of fining agents. 
    Filtration is the most common method used, and involves passing the wine through a filter medium to remove particles.

  • Step 5. Aging and Bottling

    Wine aging and bottling are two important steps in the wine-making process. Aging allows the wine to develop its flavor and character while bottling seals the bottle and prepares it for storage or sale.
    Aging is a process that takes place in barrels, stainless steel tanks, or bottles. Bottling is the process of transferring the finished wine from the aging vessel into bottles and sealing them.

John Smith

John Smith opened his interest in wine more than fourteen years ago working at a farm and in a wine bar.

    His urge to get closer to the action led him to Texas where he was inspired by the best winery owners and winemaking professionals while building and managing their wine programs for several local restaurants. 
    Smith decided to deepen his interest in winemaking industry and gained a Certificate in Viticulture from the Santa Rosa Junior College. Next he pursued a degree in Enology, Plant Science, and Chemistry, and gained winemaking experience while also experimenting with his favorite wine in his own backyard project with his wife, Mary. Finally, he embarked upon an extensive search throughout the area for a suitable location to start a commercial vineyard. That was a foundation of the Pinot Noir Winery.
